Ingredients:
Makes a generous 1 quart
- 2 large eggs
- 3/4 cup of sugar
- 2 cups of heavy or whipping cream
- 1 cup of milk
- 1/3 cup of peanut butter
- 1 cup of quartered miniature Nutter Butters (You could use the regular size, just crush them into small pieces--not crumbs)
- Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
- Whisk in the sugar a little at a time, then continue whisking until completely blended, about 1 minute more.
- Pour in the cream and milk and whisk to blend.
- Transfer about 1 cup of the mixture to another bowl and add 1/3 cup of peanut butter and mix. Return to the remaining mixture and mix until blended.
- Add to the ice cream maker and follow manufacturers instructions.
- About 2 minutes before the ice cream is done, add the Nutter Butter pieces, allow to finish churning, then add to a freezer safe bowl.
